It seems to happen in lots of junior tournaments whereby they schedule matches in the same category at the same time.

For example, in the Pioneer and Dutch, all four U19 boys quarter-finals at the same time (in the Dutch they even managed to have four finals on at the same time, even though there was plenty of time in the day to spread them out).

Now they're at it in Hong Kong too - in the last 16 there are four matches at 16.30 and four at 17.15. And tomorrow all four quarter-finals are on at the same time.

This is crazy isn't it?

Surely the players and coaches want to watch their possible opponents, the spectators have to choose one match (there's usually only one main court, so there's not much choice really). And since we're down to one match a day it's not favouring players by giving them more/less rest than the others.

Or is it just me ???

As you said, if you're only playing one or two matches in a day (which is most cases), it does make sense to put the matches in the later rounds of the main draw at offsetting times.

Yeah, it's pretty ridiculous to do that. It's not like one player can get a huge jump start over her opponent on her rest and recovery after her match.
